Every. Single. Year. It’s a party when the Arkansas Razorbacks come to Texas! The Southwest Classic is a staple in the Wilkins family. We’ve lost for the last 9 years, but we still reminisce on the year the Aggies joined the SEC and all of the Arkansas fans were SCREAMING ‘SEC. SEC. SEC’, because we WON. Memories. The best kind of memories. Memories that involve the Southwest Classic are my favorite. Dad screaming, overtime, after overtime, popcorn flying, a few fetal positions later….

DID WE DO IT???

Probably, not. But that’s okay, family. I made delicious cake and we can eat our feelings when we get home.

Ina Garten’s Chocolate Cake. It’s sooooooo good! On a Saturday, when your favorite team has lost, THERE IS NOTHING BETTER than this coffee-chocolate goodness!

Look at these beauties. It’s perfection.

I use wax paper and butter to rim the cake pans. By doing this, the cakes will fall out easily and clean up is a breeze.

Beatty’s Chocolate Cake: Ina Garten

Cake Ingredients

Butter, for greasing the pans

1 3/4 cups all-purpose flour, plus more for pans

2 cups sugar

3/4 cups good cocoa powder

2 teaspoons baking soda

1 teaspoon baking powder

1 teaspoon kosher salt

1 cup buttermilk, shaken

1/2 cup vegetable oil

2 extra-large eggs, at room temperature

1 teaspoon pure vanilla extract

1 cup freshly brewed hot coffee

Chocolate Buttercream Frosting, recipe follows

Chocolate Frosting (I double this recipe.)

6 ounces good semisweet chocolate (recommended: Callebaut)

1/2 pound (2 sticks) unsalted butter, at room temperature

1 extra-large egg yolk, at room temperature

1 teaspoon pure vanilla extract

1 1/4 cups sifted confectioners’ sugar

1 tablespoon instant coffee powder
