Once upon a time in a land far far away, I used to be obsessed with a restaurant called Houstons and specifically their Tortilla soup.

It was delicious, it was comforting, and it was oddly creamy. But it was not creamy flavored cream.

It was outstanding.

And, as such, I have spent the last decade or so trying to come up with this recipe but make it vegan.
