I spent a lot of time trying to think of the perfect snacks for a socially distanced or small Derby party- and finally I came up with this simple spread with nods to Kentucky and the South at large.
We have 3 recipes in this post:
- Shrimp Cocktail with a whiskey dipping sauce
- Pimento cheese on Pretzel Buns
- TexTucky Sheet Cake
First of all, all of these recipes are maximally delicious but they’re also simple, easy to make in advance, and kid approved.
For the Shrimp Cocktail, you can either boil or buy precooked shrimp. Personally, I prefer to cook it myself, but choose your own adventure.
My old Costa Rican roommate used to eat Pink Sauce on everything, so this cocktail sauce is partly a nod to her. I simply mixed together ketchup, mayo, whiskey, and worcestershire.
Sounds weird, but is DELICIOUS. This is great to make ahead and pull out when needed.
Next up: Pimento cheese on mini Pretzel Buns. I made the buns from Sally’s Baking Addiction, but instead of making them ‘full sized’ I cut the recipe into 48 pieces. These are the perfect two bite sandwiches. I just love bite size food, it’s just so cute!
My secret to Pimento cheese is Pickle Juice. It adds a depth to the flavor and it makes my mouth happy.
Last up: Textucky sheet cake! This is a riff on a family recipe that my mom has been making for my brother and dad’s birthday since the dawn of time. This is a lightly flavored bourbon cake with that traditional Texas sheet cake feel.
I know what you’re thinking: But Rebecca, why not cupcakes? LET ME TELL YOU WHY, Because honestly, cupcakes have a tendency to become dry. I present to you a perfectly fudge sheet cake cut into cute little 1″ bite sized pieces! Like a cupcake, but better!
