Special days deserve special drinks, don’t you think?
I definitely do, so it was decided that my kids should have a special drink for St. Patricks day- this is an easy peasy lime squeeze-y one to make, and it can be accomplished in less than 10 minutes with a few simple ingredients.

The real name for this drink is a Lime Rickey, or if you’re a fan of Sonic, A Limeade. I stand by the new name, though, because we’ve made a capital improvement on this classic drink by using Jello to make Ice Cubes! The kids thought this was 5 stars fine holiday fun. Vegan? Try this. It’s actually my favorite.

To make your Jello ice cubes, follow the recipe on the box and refrigerate until set. Slice into cubes and set aside.
Once you’ve managed to get your cubes going, all you have to do is mix up a simple syrup. Simple syrup is, (wait for it) SO SIMPLE. Mix sugar and boiling water in a 1:1 ratio and allow it to cool.

Mixing the lime juice, the La Croix, and the Simple Syrup was easy- but now give your best bud a cheers and take a sip because you’ll feel LUCKY that you’ve got the perfect Lucky Lime O’Henry! Amiright or Amiright?
